Tasty Thursday with Amy ~ Strawberry Cheese Danish

Hello to all my wonderful readers. Today is my 6 year olds 7th birthday so I will be “out of the office” today and most likely the rest of the weekend. My 2 year old has his third birthday on Saturday so we are a busy family right now with all our celebrations. Not that they’re anything more than cake and ice cream and having a friend or two over to play. We only do the friend birthday party every other year and last year was the on year for that so this year we’re taking it easy. Woohoo for me!

I am always looking for new ways to clean out my refrigerator and use up the stuff I have in a creative way. Before my family and I embarked on our trip to Indiana to celebrate my brother in law’s wedding, I had one of those moments where I just wanted to clear out the refrigerator before I came back to a weird fridge monster. So I managed to cook a bunch of successful meals throughout the week and the day before our departure, I was left with a can of crescent roll, a package of cream cheese and a container of Kaylee’s favorite…strawberries. Now I was wondering what I could make with these items that we could actually finish eating before we left. I hit up my favorite place on the web…Pinterest. I found several concoctions that I could try but one stood out above the rest. I found a recipe for a cheese danish made with crescent rolls. I fancied it up with the strawberries and here is what I ended up with:



Strawberry Cheese Danishes 

Makes 16   {Printable Recipe}

Ingredients:                                                                     
Danish:
  • 2 tubes of crescent rolls
  • 1 8 oz package of cream cheese (at room temp)
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract

 

Macerated Strawberries:
  • 2 cups chopped up strawberries
  • 1/4 cup sugar
Icing:
  • 1 cup confectioner’s sugar
  • 1 tbsp milk
  • 1 tbsp butter (softened)

 

 


Directions:

  • Preheat your oven to 350 degrees F. In a small bowl, combine the strawberries and sugar and allow them to sit for 15 minutes. 
  • Mix the cream cheese, 1/2 cup sugar, and vanilla with a whisk until it is somewhat fluffy. 
  • Open the tubes of crescent rolls. Without unrolling them (leave it in a log shape), cut into 8 pieces. Do the same to the other roll. Place the disks onto a lined cookie sheet and press your finger into the center of each disk, essentially making a little dough cup. 
  • Dollop the cream cheese mixture into each cup and top with the macerated strawberries. Make sure not to get too much of the strawberry juice onto the danish or it will make it a bit soggy. 
  • Bake for 15-20 minutes or until golden brown.
  • While the danishes are baking, make the icing by whisking the confectioner’s sugar, milk and softened butter until it forms a glaze.
  • Remove the danishes from the oven and allow them to cool before spooning the icing over them.
