Hello to all my wonderful readers. Today is my 6 year olds 7th birthday so I will be “out of the office” today and most likely the rest of the weekend. My 2 year old has his third birthday on Saturday so we are a busy family right now with all our celebrations. Not that they’re anything more than cake and ice cream and having a friend or two over to play. We only do the friend birthday party every other year and last year was the on year for that so this year we’re taking it easy. Woohoo for me!

Strawberry Cheese Danishes
Makes 16 {Printable Recipe}
- 2 tubes of crescent rolls
- 1 8 oz package of cream cheese (at room temp)
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 2 cups chopped up strawberries
- 1/4 cup sugar
- 1 cup confectioner’s sugar
- 1 tbsp milk
- 1 tbsp butter (softened)
Directions:
- Preheat your oven to 350 degrees F. In a small bowl, combine the strawberries and sugar and allow them to sit for 15 minutes.
- Mix the cream cheese, 1/2 cup sugar, and vanilla with a whisk until it is somewhat fluffy.
- Open the tubes of crescent rolls. Without unrolling them (leave it in a log shape), cut into 8 pieces. Do the same to the other roll. Place the disks onto a lined cookie sheet and press your finger into the center of each disk, essentially making a little dough cup.
- Dollop the cream cheese mixture into each cup and top with the macerated strawberries. Make sure not to get too much of the strawberry juice onto the danish or it will make it a bit soggy.
- Bake for 15-20 minutes or until golden brown.
- While the danishes are baking, make the icing by whisking the confectioner’s sugar, milk and softened butter until it forms a glaze.
- Remove the danishes from the oven and allow them to cool before spooning the icing over them.
